Caviar (Roe) Allergy

Chen et al outlined the case of a 42 year old woman who experienced itching wheals, flushing, abdominal cramps, bronchospasm, and shock approximately 30 minutes after eating kingfish (Spanish mackerel) caviar salad. She developed acute respiratory failure and profound shock. She had previously experienced acute urticaria after consuming shrimp, but did not recall any problems related to fish, milk, or chicken egg.

Testing revealed that the anaphylactic reaction the woman experienced was to the kingfish caviar.

They note that Roe is an extremely rare cause of anaphylaxis and only 1 case of Russian Beluga caviar-induced anaphylaxis and 1 case of salmon caviar-induced anaphylactic shock have been reported in the literature to date.
