Raw Pork Allergy

Dominguez-Ortega provides an interesting case of allergy to raw pork that was identified in a six year old boy.

The symptoms included redness and itching around the mouth and swelling of the lips and occurred within minutes of him eating fresh and vacuum-packed cured ham.

The same problems arose when he ate other cold meats such as pork loin, homemade chorizo, and fuet (cured sausage). He was able to tolerate boiled ham, fried pork, beef, and lamb.

Skin prick tests were negative to all the allergens tested except commercial raw pork extract.
