APPENDIX 1: FOOD ADDITIVES

​​Food additives are substances added to a food during processing for a specific purpose such as adding colour to food or helping to preserve it. Each country has regulations that outline which additives can be used, in what quantity they can be used, and in what type of foods they can be used. 
​All additives have a name and a number assigned to them. The numbering system for additives in Europe currently has the letter E followed by the number. An international numbering system is being developed and, in the majority of cases, the European numbers correspond to it. 
​Some additives are restricted to use in a limited number of foods whereas others are allowed at whatever level is necessary to achieve the desired technical effect (this is referred to as "quantum satis") and no limit is set. Some additives have been allocated a figure for acceptable daily intake (ADI) and others have not.
​Accessing information within European legislation, with the constant amendments and updates, is like entering an intricate maze without a map. Thankfully, there are initiatives under way to attempt to simplify the way information is presented.

If you keep a detailed food diary and have any concerns about a particular additive you will be able to find out more about the additive by searching on line. General searches may provide the information you are seeking but if they don’t then try searching through research papers at a site such as PubMed (http://www.ncbi.nlm.nih.gov/pubmed/).
